Banana Chocolate Chip Muffins

Using a muffin mix makes this recipe super quick 

If your fussy eater is resistant to breakfast, try these moreish muffins. Enriched with PaediaSure Shake, they are packed with essential nutrients. Swap out the choc chips for chopped pecans for a healthier option. They make a great after-school snack too.

 

Makes 12 muffins | Takes 35 minutes

Ingredients:

  • 1 400g/14 oz package banana muffin mix

  • 1 cup PaediaSure Shake ready-to-drink, vanilla flavour

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1/2 cup miniature chocolate chips

Method:

  1. Preheat oven to 200°C/400°F. Use paper baking liners for the muffin pan. Combine muffin mix, PaediaSure Shake ready-to-drink, oil, chocolate chips, and eggs. Beat 50 to 75 strokes until mix is moistened. It will look lumpy. Fill muffin liners 3/4 full. Bake for 15 to 25 minutes or until toothpick inserted in the centre comes out clean. Cool pan on a rack for 5 minutes. Remove the muffins. Serve warm or cooled to room temperature.
