Banana Chocolate Chip Muffin Recipe with PaediaSure Shake

If your fussy eater is resistant to breakfast, try these moreish muffins. Enriched with PaediaSure Shake, they are packed with essential nutrients. Swap out the choc chips for chopped pecans for a healthier option. They make a great after snack too.

Method

Preheat oven to 200°C/400°F. Use paper baking liners for the muffin pan. Combine muffin mix, PaediaSure Shake ready-to-drink, oil, chocolate chips, and eggs. Beat 50 to 75 strokes until the mix is moistened. It will look lumpy. Fill muffin liners 3/4 full.Bake for 15 to 25 minutes or until a toothpick inserted in the centre comes out clean. Cool pan on a rack for 5 minutes.Remove the muffins. Serve warm or cooled to room temperature.

1 400g/14 oz package banana muffin mix1 cup PaediaSure Shake ready-to-drink, vanilla flavour

1/2 cup vegetable oil

2 large eggs

1/2 cup miniature chocolate chips
